Picnic Salad
Ingredients:
- Cannelini Beans
- Black Beans
- Sweet Corn
- Garbanzo Beans
- Celery
- Red onion
- Kale
- Cilantro
- Lemon
- Red wine vinegar
- Olive oil
- Salt and pepper
How to make the salad:
This is a great salad to take to a potluck or just toss up for a picnic lunch! I love it because it is so easy, yet tastes amazing. First, get black beans, cannellini beans, and garbanzo beans (I prefer to soak them the night before and make them fresh) and mix in a large bowl. There should be equal amounts of each type of bean. Next, dice up some onion, celery, and kale very finely and add them to the bowl. Then, add your sweetcorn(frozen, fresh, or canned). Lastly, squeeze a little bit of lemon and mix it in a separate bowl with red wine vinegar, olive oil, salt and pepper. Garnish with cilantro and enjoy!!
