Cucumber Refresher

Ingredients:
  • Cucumber
  • Quinoa
  • Roasted Red Peppers
  • Almonds
  • Cashews
  • Butter Beans
  • Avocado Oil
  • Balsamic
How To Make the Salad:
This is a great salad that is filling, delicious and has a nice crunchy taste! First, Finely slice the cucumbers, roasted red peppers and tomato's (3 tomato's and 3/4 a cucumber makes for 4 servings)
Then, drain a can of butter beans and chop a handful of almonds & cashews(i like to leave the almonds whole) Next, cook 1 cup of quinoa in 2 cups of boiling water. When the quinoa is cooked toss everything together and drizzle with avocado and balsamic!
This is a easy and quick salad for a party of even a healthy option for your family!
