Quinoa Blend

Ingredients:
  • Quinoa
  • Corn
  • Bell Pepper
  • Coriander
  • Onion
  • Black Beans
  • Mexican Spice Blend
How to make the salad:

First, cook the quinoa (as per packet instructions). While the quinoa is cooking sauté your corn, bell pepper, and onion. After the quinoa has cooked, mix in black beans, and sautéed veggies. I usually add in a spice blend consisting of salt, pepper, garlic, chili, and lemon and toss the mixture to enhance the flavors.

This is a perfect salad, that doubles as a satisfying meal. The quinoa adds substance, while the veggies and spices allow for a harmony of flavors. This quick and easy recipeis great for a lunch on the go, or quick dinner recipe.
