Spice It Up
Ingredients:
The reason this is such a delicious salad is that not only is it vibrant but the aroma is really mouthwatering.
For this salad i used dried garbanzo beans that i soaked then pressure cooked. Of course you can use a can of drained beans instead.
mince a medium onion and saute in a tablespoon of olive oil and a tablespoon plus of curry powder and a finely diced garlic clove.Season with salt.Once translucent remove and squeeze some fresh lemon juice.
Toss a mixed salad made up of radicchio, baby spinach,and rocket salad in olive oil and season with black pepper and salt.
Just before serving top the salad with the warmed beans and garnish with a dollop of sour cream, or greek yogurt.

Love this salad - so simple but the mix of hot and cold works really well. As a vegan, I will look to replace the sour cream with Ume plum dressing. I love hummus so anything involving chick peas is a winner for me. You have so many great ideas - I look forward to seeing some Halloween or Christmas themed salads!
