The Layered Bowl

Ingredients:
  • Mushrooms
  • Avocado
  • Sour cream
  • Bell pepper                                                        
  • Ice berg lettuce
  • Manchego cheese
  • Onion
  • Salsa
  • Black beans

How to make the salad:

I love this salad because it is almost a meal in itself, and it takes less than 15 minuets!
First, Sautee the mushrooms, onions, and bell peppers adding in salt, pepper, and spices(I use a spice blend). Next, cut your avocado, manchego cheese, and ice berg lettuce. Toss your sautéed veggies with the avocado, cheese, and lettuce, adding in your black beans(pinto works also). Lastly, top it off with sour cream, and salsa.
Voila, just like that a healthy, and filling meal! Often times, a time crunch means an unhealthy lunch, but this salad is the perfect solution!
