Veggie Toss

Ingredients:


  • Quinoa
  • Broccoli
  • Baby corn
  • Carrots
  • Bell pepper
  • Onions
  • Peanut Butter
  • Honey
  • Soy sauce
  • Water
  • Garlic       

How to make the salad:

To cook quinoa follow as per packet instructions, this generally involves double amounts of water in proportion to quinoa. After adding quinoa to the boiling water, allow the quinoa to absorb all the water(this generally take 10-15 minuets). The quinoa should have a nutty texture.
Next, dice all vegetables and mix with cooked quinoa on frying pan with a little olive oil. Cook mixture until vegetables are fully cooked.
To make the dressing, combine peanut butter, honey, soy sauce, and garlic in a nonstick pan and stir until peanut butter dissolves(this might require small amounts of added water).
Pour peanut dressing over vegetable quinoa mixture, and voila!
