How to make the salad:
You read correctly, I did say black rice !!!!
Its a perfect alternative to white rice, more nutritious and with a hearty texture. Cook the rice according to the packet instructions in vegetable broth or water flavored with salt and butter.Plate immediately upon cooking .Dice half a red onion and saute till translucent, mix into the cooked rice.
Dice a few cherry tomatoes and an English cucumber and toss in the rice. season with salt and pepper and garnish with a sliced, peeled orange.
This is a hearty salad eaten as a main dish and best served hot.
