Warm bean and quinoa salad
Ingredients:
Four simple ingredients but big taste and a meal in itself.
Slice up two cups of mushrooms and saute gently in a knob of butter and a spoon of olive oil, add two cloves of chopped garlic and be careful not to burn it.
Rinse and drain a can of pinto beans.
Cook as per package instructions, three cups of quinoa in vegetable broth and toss in the beans, mushrooms and a handful of raisins sprinkle salt and black pepper.
