Beet Taco Salad
Ingredients:
- Small cooked beets
- Small red onion
- Small crisp butter lettuce
- English cucumber
- Tomatoes
- Salt and pepper to taste
- Feta cheese
- Watermelon
Finely dice all the ingredients except the lettuce and feta, toss in a bowl and season.
Separate the lettuce leaves and wash and dry.
Just before serving, take a tablespoon of the beet salad and scoop into a lettuce leaf, top with the feta cheese, wrap and serve.
Its as simple as that.
Although some of you may shy away from beetroots, they really can be quite delicious when paired with the right ingredients.
Here the combination of other vegetables tones down the overpowering beet taste, making it more subtle. Try this crunchy delight.
