Unbelievably Yum Potato Salad

Ingredients:
  • Red Potatoes
  • Celery 
  • Red & Green Bell Peppers
  • Red Onion 
  • Homemade Dressing

How to make the salad:
This  potato salad is healthier and tastier than your deli style ones. All the ingredients are fresh and you control the fat and sodium content by making your own very quick and easy ranch style dressing.
Its creamy and crunchy, hope you enjoy it !

Boil till tender 3 potatoes, remove skin and chop. Dice the rest of the vegetables fine to medium and toss into a bowl with the cooled potatoes.
For the mayo, add three quarters of a cup of low fat buttermilk, two tablespoons of all natural low fat sour cream, three tablespoons of lite, all natural mayo, a tablespoon of dill (adjust to taste), and two teaspoons of garlic mustard with a dash of hot sauce, blend. If you cant find garlic mustard then use dijon and add a clove of minced garlic.
toss all the ingredients gently together and serve chilled. This works well as a side to pasta or a sandwich.
