Curried Potatoes

Ingredients:

  • Baby Red/White Potatoes(smaller the better)
  • Red Onion
  • Crushed Peanuts
  • Coconut
  • Green Bell Pepper
  • Sesame Seeds
  • Chili Powder
  • Fresh Lemon Juice

How to make the salad:
For this dish use the tinniest potatoes you can find and boil them whole.
Saute one small red onion until translucent, add a chopped bell pepper, a tablespoon of sesame seeds, and shredded coconut and season well, you will need plenty of oil during this process. Once cooked through, toss in the potatoes and gently toss, sprinkle on a half cup of crushed peanuts. Be generous with your seasoning since the potatoes are whole.
Serve this warm.
