Ingredients:

  • Parsley
  • Sliced English cucumber
  • Red onion
  • Israeli cous cous
  • Squeeze of fresh lemon
  • Salt, pepper, chili flakes

How to make the salad:

QUICK AND EASY to make this is perfect for an eat n' dash lunch.
the cous cous can be pre cooked in a veg broth and cooled then tossed with a cup each of chopped onions and cucumbers. Squeeze some fresh lemon juice and sprinkle sea salt and fresh black pepper with chili flakes for heat.
Alternatively, you can mix up the flavor by cooking the cous cous in a tomatoes, garlic broth and adding oven dried tomatoes and replacing  the parsley with a few leaves of shredded basil.
This simple salad is great for anytime and is a great appetizer for dinner or party's!
