How to make the salad:
This salad is great for a quick and easy lunch. The vinaigrette give a nice tanginess that brightens up the salad and pairs well with the spinach.
Take the artichokes(i like to use bottled artichoke hearts) and toss them with the spinach
Add the raw beetroot with a sprinkling of feta
Lastly finish it off with the lemon vinaigrette, to make this add olive oil, lemon juice, dijon mustard, sugar and minced shallots
Toss it all together and add salt and pepper to taste!
Just like that a quick and easy meal is done. This salad is restaurant quality but without all the unwanted calories!!!!
- 1/2 cup Artichoke
