Summer Southwestern


Ingredients:

  • 1/2 a large Cucumber 
  • 1 can of Sweet corn 
  • 1/2 Red Onion
  • 2 Avocados
  • Handful of Cilantro
  • 3 Cups Grape Tomatoes
  • 2 Tbsp Creamy cilantro dressing
How to make the salad:

i LOVE  sweet corn and avocado, especially in the summer. This cooling salad has creaminess and crunch.
Its sweet and tangy.
Finely dice about a cup of each ingredient except the corn, and very gently toss, adding the avocado last.
To make the dressing, take 2 cups of fresh cilantro and place in a blender with a cup of buttermilk and a teaspoon of hot and sweet mustard, salt and peeper. Drizzle and top with a handful of pine nuts (no nut substitute will work here, SERVES 4 )
