Pecan Pie Salad
Ingredients:
- Baby spinach
- 1 cup of pecans
- 1 cup of blackberries
- Half a diced English Cucumbers

This salad was a bit of an experiment
I love to use pecans but I was a little short on time and I wanted sweet crunchy ones so I fudged the traditional way of making them in the oven and did a stovetop one that made them taste a bit like my pecan pie filling !!!!!
In a heavy pan add a tablespoon of corn syrup and a tablespoon of sugar and let gently melt.
Add the pecans and on a low heat toss in the mixture and toast gently.
once cooled you get crunchy, sweet caramel pecan pie style nuts Mmmmm.
In a bowl add a few cups of baby spinach, add the finely diced cucumbers and top of with the berries and nuts.
I did not add any dressing since the sweet, tart berries and the nuts were full of flavor nothing more was needed.
