Fall Favorite

Ingredients:

  • Butternut Squash
  • Beetroot
  • Onions
  • Potatoes
  • Roasted Garlic
  • Mixed Dried Herbs
  • Olive Oil


How to make the salad:

On a cold winter day this comfort food salad is perfect and warming
dice two cups each of potatoes and butternut squash. Dice a medium white onion and a beetroot
toss and coat in olive oil and place on a baking sheet
sprinkle generously with dried mixed herbs de province or else use a few sprigs of fresh rosemary,
salt and pepper bake at 400F for 30 minuets
before serving add some chopped roasted garlic
