Quinoa Toss

How to make the salad:
The quinoa makes a great alternative to pasta and its great as a meal by itself.
If you haven't tried or even heard of quinoa don't worry its just like cooking rice and does not have an overwhelming flavour so anything you toss it with will work. I prefer to cook this in the stock to give it more flavour!
How to make the salad:
- Cook 2 cups of dry quinuoa according to packet directions in vegetable stock as opposed to water
- Steam one cup of fresh or frozen vegetables and toss in a tablespoon of butter, 2 cloves of finely minced and sauted garlic and a cup of thinly shredded cilantro
- Add a quarter cup of diced red onions
- Toss together and season with salt and black pepper, voila!
