Broccoli Slaw

Ingredients:


  • Raw fresh broccoli
  • 2 tablespoons of dried cranberries
  • 2 tablespoons of sunflower seeds 
  • Quarter cup low-fat buttermilk
  • 2 tablespoons of sour cream
  • 1 tablespoon of red wine vinegar
  • Honey to sweeten 
  • Salt and pepper
  • Quarter cup raspberries
 
How to make the salad:
Chop finely and wash the broccoli and add to a salad bowl.
In a blender add all the other ingredients except the cranberries and seeds and blend. Pour over the broccoli, toss. Garnish with seeds and dried cranberries.
This is a low-fat and scrumptious version of the classic broccoli slaw. Rather than using a heavy mayonnaise dressing and adding unnecessary calories and fat I have kept the flavor and tweaked the dressing to make a simple, healthy alternative you will prefer over the original !
