How to make the salad:
This salad is a twist of a delicious salad I recently tasted! I loved the texture of the caramelized walnuts, with the pickled onion, and knew I had to add my own spin to it.
Begin by making your caramelized walnuts. Add sugar, and balsamic vinegar into a saucepan. Once the sugar has dissolved, add in your walnuts, coating them evenly with the mixture. Next, lay out your walnut mixture onto a baking sheet and bake in the oven at 365 degrees until brown.
To make pickled onions, add sugar, distlled white vinegar, red wine vinegar, and salt intoa saucepan. Add in your chopped red onion, and let the mixture boil. Cool the mixture before serving.
Now, add your arugula, cranberries, feta, caramelized walnuts, and pickled onion. Toss your ingredients together, and drizzle lightly with avocado oil.
