Sweet n' Savory
Ingredients:
- Arugula
- Oranges
- Blackberries
- Beetroot
- Mozzarella
- Sunflower seeds
- Pecans
- Maple syrup
- Balsamic vinegar
- Olive oil
How to make the salad:
Personally, I love this salad because of the simplicity of it. First, take you pecans and sunflower seeds and place them on a frying pan. Keeping the stove on minimum heat, add the maple syrup to the frying pan. Stir the nut and syrup mixture on light heat until nuts are slightly toasted and clustered. Next, slice oranges, beetroot, blackberries, and mozzarella and toss into a bowl of arugula. Lastly, add your nut clusters and olive oil and balsamic vinegar!
This salad is a perfect combination of sweet and savory. The addition of the maple nut clusters balances the bitterness of the arugula, and adds for a nice crunch, while the simple dressing allows the flavors of salad to shine. This is a perfect spring or summer salad, that can be tossed together in less than 15 minutes!
