Spicy bean salad

Ingredients:
  •  Garbanzo beans
  •  Butter beans
  • Sweetcorn 
  • Cilantro
  • 5 mini sweet peppers
  •  Red onion  
  • 1 tomato
  • Tofu or paneer
How to make the salad:

Drain and rinse a can of each of the beans and sweetcorn. Toss the beans and corn together and add a finely diced red onion, sliced peppers and chopped tomato. Season with salt and pepper.
Dice a cup of the paneer or extra firm tofu and saute in a hot frying pan with some olive oil until browned, season with salt and dried garlic flakes.
Take 3 tablespoons of pesto hummus and thin out with a tablespoon of sour cream, season with salt and black pepper and toss in with the salad. Add a dash of cayenne to zest up your salad !
