How to make the salad:
A small amount of this nutritious salad goes a long way.
Gently toss one cup each the cooked grains together(barley, wheat berries, wild rice and quinoa)
Add a cup of the mixed chopped nuts and half a cup of the dried cranberries.
For the dressing stir in a quarter of a cup of canola oil, with a teaspoon of maple syrup, a tablespoon of fresh squeezed orange juice and finely minced fresh thyme. drizzle over the salad and end with salt and pepper to taste and a squeeze of fresh lemon juice with a sprig of mint to garnish.
Although i sometimes use dried herbs, there are some recipes in which this just wont do and this is one of them. Fresh orange juice and herbs are essential and since you are using nuts it is important to ensure the oil in them is not rancid. Keep them in the fridge and gently toast before adding to the salad.
You can also swap out the cranberries for raisins, which i prefer since the store bought dried cranberries are loaded with sugar to counteract the tartness.
Just a cup of this will fill you up and its not only delicious its nutritious !
