Satisfied


Ingredients:
  • 1 cup of cooked cous cous
  • 1 cup of grilled eggplant 
  • 1 diced boiled egg                                                                   
  • half a cup of cooked beetroot
  • half a cup of broccoli slaw
  • 1 cup of spring lettuce mix cut
  • half a cup of tomatoes 
  • half a cup of diced onion
  • garnish of blue cheese and cilantro

How to make the salad:

Ok , so this is one of those salads that when you eat it you feel fully satisfied without feeling guilty for having
eaten unhealthy, fatty food.
In this salad you have carbs to keep you satisfied coming from your cous cous, protein in your eggs and dairy and plenty of veggies, the key is to minimize the dressing but maximize the flavor
With respect to the Japanese eggplant you slice it at an angle, drizzle with olive oil and season with salt and black pepper and fresh garlic and roast in the oven at 350 until tender. or you can buy it in a jar or at any deli section of the grocery store
Cous cous is a favorite of mine, cook as per packet directions but use vegetable broth to maximize flavor.
you can also mix it up a bit by adding oven dried tomatoes to it and fresh basil after its cooked or fresh garlic and cilantro or fresh pesto. By having the variety you change up the flavour.
