Tuscan Kale

Ingredients:

  • Two cups of kale
  • Two cups of red lettuce
  • A few tablespoons of toasted sesame seeds
  • One cup of cooked red quinoa
  • Soy Sauce (teaspoon)
  • Toasted sesame seed oil (TABLESPOON)
  • Red wine vinegar (tablespoon)
  • Salt and pepper

How to make the salad:

(per 2 servings) So this dish is super healthy, vegan and gluten free. When you cook the quinoa ,use a good low sodium vegetable broth instead of water for extra flavor and season it well with salt and pepper
Toss the kale, lettuce and quinoa together in a bowl, Sprinkle a tablespoon of sesame seeds.
Take a tablespoon of red wine vinegar, add a tablespoon of the sesame seed oil, a teaspoon of soy sauce and toss into the salad.
Season with salt and pepper
