Chinese Chickenless Salad

This is my take on the traditional chicken salad. Its a vegan and gluten free option that's REALLY tasty and healthy!!!

Ingredients:

  • Cooked rice noodles
  • Tofu
  • Whole baby corn
  • Soybeans
  • Garlic
  • Bean sprouts
  • Toasted sesame seeds
  • Toasted sesame oil
  • Hot sauce
How to make the salad:
Drain and dice the tofu and toss in the rice noodles, add a cup of cooked soybeans and the beansprouts and a few whole baby corn and season with salt and garlic chips or roasted garlic.
To keep this gluten free omit  soy sauce but I added sarachi hot sauce for an added kick, toasted  sesame seed oil for flavor with toasted sesame seeds on top
 and a gluten free crunchy topping like tortilla strips or chopped peanuts.
