Autumn Blend
- One can of sweet corn
- Two tomatoes
- Two yellow squash
- Half a cucumber
- Day old baguette
Chop the tomatoes and cucumbers into cubes and toss with the beans and corn.
Slice the squash and grill until tender and browned on both sides
Arrange the vegetables and beans on a dish and arrange the warm squash on top.
Season with salt, pepper, olive oil and some white wine vinegar.
Take the baguette and cut and dice. Drizzle olive oil in a pan and toss and toast the bread to make your own croutons.
When crisp add to the side of your plate.
