The Date Night






Ingredients:

  • Fresh Sweet Corn  Kernels   
  • Finely Diced Cucumber
  • Cherry Tomatoes
  • Red Onion
  • Red Lettuce
  • Garbanzo Beans
  • Roasted Yellow Bell Peppers

Dressing:

  • Buttermilk
  • Cilantro
  • Salt and Pepper to Taste

How to make the salad:
  • Finely dice a whole english cucmber, (i prefer these since there are no seeds and the skin is thin so it doesn't require peeling)
  • slice one cup of cherry tomatoes in half
  • rinse and drain the beans
  • roughly chop two roasted peppers, i used yellow but red works well too
  • thinly chop half a large red onion lengthways
  • i used a cup and a half of fresh cut white corn which i then steamed. This gives a delicious, sweet fresh flavour as opposed to frozen corn
  • the dressing is super easy a cup and a half of buttermilk blended with a bunch of fresh, never dried, cilantro seasoned with sea salt and fresh black pepper.
  • five or six large lettuce leaves
  • gently combine the veggies. Then arrange the lettuce leaves around a large white plate (the white against the salad makes the colours pop). Just before serving arranged the chilled veggies in the centre and drizzle the dressing.
  • Bon Appetite !!!
Why the date night you ask. Ifyou are cooking to impress then you want to make meals that are impressive in taste and visually appealing but quick to make. After all who wants to spend their date night exhausted from cooking !
So this salad looks like something you may get at an upscale resteraunt but takes only 20 minutes to make.
